INGREDIENTS
Wash butternut squash in kitchen sink
In the kitchen sink scrub the sweet potatoes
Wash lime in kitchen sink
Add 4 cups of hot water to bowl
Add 4 teaspoons of better than bullion to hot water
Use whisk to stir broth
Using a potato peeler peel skin off butternut squash
Carefully using cutting board and knife cut the butternut squash in half
Use spoon to scoop seeds out of squash
Carefully using knife and cutting board cut the butternut squash into small cubes. Keep knife tip pointed down to help cut through squash
Using potato peeler carefully peel the skin off sweet potato
Carefully using cutting board, knife, and cutting guide cut the sweet potato into small cubes
Carefully using cutting board and knife cut the top and bottom off onion
Peel the top layer off onion
Carefully using cutting board, knife, and cutting guide cut the onion into slices
Place pot on burner
Add coconut oil to pot and let melt
Add chopped onions to coconut oil
Add 1/8 teaspoon salt 1/8 teaspoon pepper to onions
Cook onions until translucent (about 5 minutes) remember to stir the onions while they cook
Peel the top layer off garlic cloves
Place garlic cloves into chamber of garlic press. Hold garlic press over pot and squeeze handles together to mince the garlic
Add ginger to pot
Add curry paste to pot
Stir spices and onions together
Add cubed butternut squash to pot
Add cubed sweet potato to pot
Cook mixture for 5 minutes stirring occasionally
Add chicken broth to pot
Turn heat up to 5
Cover and cook for 20 minutes or until squash and sweet potato are soft
Turn off burner
Ladle the soup into a blender (you may need to do more than one batch)
Once lid is on press the puree button. Purée until soup is smooth
Pour soup back into pot
Using can opener open coconut milk
Add coconut milk to pot
Add lime juice to pot
Stir then turn burner to 2 and simmer for 10 minutes
Set table with napkins, spoons, bowls, and cups

- 5.0 Garlic cloves
- 1.0 Onion
- 3.0Tbsp Red curry paste
- 1.0tsp Ginger
- 14.0oz Can coconut milk
- 1.0 Lime
- Salt and pepper
