I like to use tri-colored rotini when I want to impress (it adds excellent color to the dish) but otherwise I use multigrain because it is healthier. You can also substitute Lite Catalina for regular
Bring 4-6 quarts of water to a rolling boil; add salt to taste, if desired. Add pasta and cook to "al dente" as directed on box
while pasta is boiling, rinse and dice bell peppers and scallions.
When pasta is done, drain and add to large glass bowl. Drain Rotel; drain and RINSE both kidney and black beans
add all ingredients to bowl with pasta, toss with Catalina dressing
be sure to mix ingredients well, evenly distributing the Catalina goodness
