Preheat oven to 375 degrees. Line two baking sheets with parchment paper.

Combine flour, baking powder, and salt in a medium sized bowl. Mix well.

Cream butter and sugar together in a large sized bowl, until you get a light and fluffy texture. Add in the eggs and vanilla. Mix well.

Stir flour mixture into creamed mixture. Mix well. Form the dough into three balls. Wrap each in separate pieces of plastic wrap. Chill for about 2 hours in the fridge.

Roll dough out, one ball at a time, on a floured surface to 1/4" (0.4cm) thickness. You can cut the dough with floured cookie cutters. Put on baking sheets.

Bake in oven for 7-10 minutes or until light golden. Baking time will depend on the shape of the cookies. Once cooked, cool on the sheet for 5 minutes, then transfer to cooling rack.

Decorate once completely cooled (Optional). Enjoy your lovely soft sugar cookies! Perfect for the holidays!
