INGREDIENTS
The dough is really simple, start with the amount of flour and add warm water gradually. Knead the dough and add as much flour as needed to achieve a uniform dough.
Done! Wrap up in film and set aside for 15-20min
Flatten out to a 1.5-2mm thickness
Coat with plenty of flour, roll on itself and slice like making 1.5cm wide tagliatelle.
Open up each strip and start twisting the strips on themselves
After twisting 6-7cm, you will have one, break it with your hands and go ahead twisting more, until you have done the whole strip.
Set the ready one aside, or in a tray, and dust with plenty of flour to avoid them sticking to each other.
Eat right away or freeze for later. Cook in boiling salted water for 3-4min, and toss in your favorite sauce!
For example a nice freshly made basil pesto will do justice to it. Enjoy!
