How to make strawberry rhubarb custard pie
My family loves this pie so much that I double it and cook it in a rectangular casserole dish instead of pie plates

INGREDIENTS
Gather your ingredients
Crush one package of graham crackers. Should make about 2 cups
Add 1 cup flour and 1/2 cup sugar and mix together.
Cut 1 stick of butter into small cubes and work them into the graham cracker mixture until crumbly and it will stick together. It will seem dry but it is okay.
Take out 1 cup of the crust mixture for the topping later. Pat the rest in the bottom of the pan and up the sides a little too. Bake in 350• oven for 10 minutes
Dice rhubarb into 1/4 inch pieces.
Quarter the strawberries
Add 6 cups of rhubarb and 2 cups strawberries to a bowl
In the bowl you made the crust in, beat 6 eggs
Mix 1 1/2 cups sugar and 1/2 cup flour together then add to eggs and mix well. I like my pie tart, but you can add more sugar for a sweeter pie.
Add 1tsp vanilla and mix
Mix fruit and egg mixture together then pour over crust.
Sprinkle the reserved 1 cup of crust mixture over the fruit. Bake at 350• for 1 hour.
Allow to cool an hour before serving. Enjoy

- 6.0c Rhubarb, diced
- 2.0c Strawberries, quartered
- 6.0 Eggs
- 1/2c Sugar
- 1/4c Flour
- 1.0tsp Vanilla
