How to make strawberry oatmeal cookie bars
Easy and quick bake, great for a tea time treat or lunch box

INGREDIENTS
Assemble your ingredients
Preheat oven to 350 degrees F, 175 degrees C. Grease one 8 inch square baking tray and line with greased foil
Add brown sugar to a mixing bowl...
With the flour...
Salt, baking powder...
And rolled oats
Combine (you can use your clean hands)
Add the butter
Rub in the butter using your hands
This should form a crumbly mixture after 3-5 minutes
Press 3/4 of the mixture into the bottom of the prepared pan

Then add the jam. Spread it to within 1/4 inch of the edge

Add a sprinkling of ground almonds (optional)
Sprinkle the remaining crumb mixture over the top and lightly press it into the jam
Bake for 35 to 40 minutes or until lightly browned
Allow to cool before cutting into bars
Ready to eat (great with a cup of tea)
- 120.0g Light brown sugar
- 140.0g Plain flour
- 1.0g Baking powder
- 3/4g Salt
- 90.0g Rolled oats
- 125.0g Butter, softened
- 280.0g Strawberry jam
- Ground almonds (optional)
