Gather your ingredients. Preheat your oven to 350 degrees.
Start by melting the butter.
Put your cookies in a processor and pulse, or you can put them in a ziplock bag and use a dough roller.
Add your butter to your cookie crumbs and mix.
Mesh your cookie crumbs in to a 9" springform pan to form the crust. Place crust in your 350 degree oven for 10-12 mins. After it's done. Place in the freezer for 10 mins.
Rinse your strawberries remove the stems and pat dry.
Coat a baking sheet with foil and non stick food spray. Or you can use parchment paper
Now let's work on your filling. Combine 16 oz of cream cheese, 1 1/2 cups sugar, 1/2 teaspoon of vanilla extract, 1 tb spoon of lemon juice in a mixing bowl. Add your eggs 1 at time.
Pour your filling into your pie crust. And bake for 1 hour
While your pie is cooking let's work on your whip topping. Combine your 1 cup of heavy whip and 2 cups of powder sugar, and food coloring to make it pretty. Whip until it stiffens
Put your whip in a bottle or a ziplock bag and refrigerate.
Now let's work on your glaze for your strawberries. In a saucepan combine your 1/2 cup of water, 1 cup of sugar, 1/2 tb of lemon juice, and 1/4 cup of corn syrup. Be sure to stir it continuously
Make an ice bath. This will be used to sit your glaze in to prevent it from cooking any more.
Add your strawberries. When you are done place the strawberries on your cooking sheet and set aside.
Beep, beep. Your pie is done. Remove from oven. Let it sit at room temp for 30 mins. After it has cool. Spread your whip and add your strawberries and put in fridge for 2 - 3 hours to stiffing up.
