INGREDIENTS
Boil water and cook pasta according to box, preheat broiler on low
Pasta is 12 oz of Rotini pasta, drain and set aside, reserve 1 cup of pasta water
In a pan add 1 T olive oil
Add one large chopped onion
1/2 t salt
1/2 tsp pepper
Chop 4 garlic cloves
Add to onion
Cook about 2-5 mins
In a bowl mix 3/4 low fat sour cream
4 oz low fat cream cheese
1/2 c Parmesan cheese
2 tsp lemon zest
Juicing a lemon
Add 1 T lemon juice (this is a bit much lemon for my taste and would 1/2 it)
Add garlic and onions , mix well
Add pasta
Mix in 10 oz of spinach
Add 1 can (13.5oz) chopped, rinsed artichoke hearts
Add the 1 c reserved pasta water
Add 1/2 c shredded mozzarella cheese
Add to broiler safe pan
Add 1/2 c mozzarella cheese to top, place in oven for about 3-5 mins
This is done, you can cook it longer if you want more brown
Serves 8 servings, 330 cals per serving
