Crumble the yeast.

Mix yeast and water, either in your kitchen Assistant or by hand.

Let the machine do its job.

Now add salt...

..and treacle. Turn on the machine again for a couple of seconds.

Then add the sunflower seeds.

And now the spelt. I sifted all the flour but that's optional.

Turn on the machine once more. Now do the same procedure with the wheat flour.

Slowly it is taking the shape of a dough.

When the texture is right...

..cover with a (clean) kitchen cloth and let sit for 30 minutes.

The dough hasn't doubled in size but hopefully it's enough.
I was home alone so there aren't photos of every step;I would have needed a real assistant to make that happen. The dough was very sticky when I poured it onto my baking tray.
I needed quite a lot of extra wheat flour to make the dough pieces even remotely look like breakfast buns BUT the result was so worth it!

Here we have them ready to rest another 30 minutes.

I got about 10 buns.

Once they have rested, coat the buns with milk and sunflower seeds.

Like so. Bake in the oven for about 10 minutes at 250 degrees C.

Mine came in various sizes and shapes 😉 Serve with butter and/or cheese, or why not a nice (homemade) jam?

- 25.0g Yeast
- 400.0ml Water
- 1.0tsp Salt
- 1.0Tbsp Treacle
- 100.0ml Sunflower seeds
- 400.0ml Wheat flour
- 400.0ml Spelt
- 3.0Tbsp Milk or water
