Gather your ingredients.
Measure out packed brown sugar, granulated sugar and butter in a large mixing bowl.
Cream together butter and sugars with an electric mixer.
It should look something like this^
Now, add the egg and vanilla and combine.
In a separate bowl, combine flour, baking soda, oats, salt, cinnamon and nutmeg.
Stir dry ingredients into wet mixture.
Fold in your raisins.
If you're like me and you aren't worried about salmonella, feel free to taste test at this point ;)
Okay, now this is probably the hardest part. Refrigerate your dough for at least 30 mins. This allows the cookies to be thick and puffy, and lets the flavors sink in.
After about 30 mins, remove your dough from the refrigerator and preheat your oven to 350 degrees F.
Line two baking sheets with parchment paper. Roll dough into whatever size balls you want and put them in the preheated oven. Sorry I forgot a pic!
Remove from oven after about 8-10 mins, or longer depending on the size of your cookies. They should be a light golden brown on the edges and slightly under baked.
Let them sit for 5 mins on cookie sheets, then transfer to a wire cooling rack.
Enjoy! Cookies can be stored in an airtight container...if you have any leftovers! :)
