How to make sofrito

Sofrito is a mixture of fresh vegetable that is used as a base in many latin dishes .In my guides you will see me using it a lot. Here is my simple sofrito recipe. Enjoy.

This is Ajices gustosos(dulces), If you can not find these you can use mini sweet peppers. They usually come in a bag of different colors. Costco carries them.

After it has blended. I freeze mine in ice cube trays. You can also freeze in small containers. I prefer this option.

Freezing sofrito is convenient. It saves me alot of time in the kitchen. I always have some in the freezer at a moments notice when I have to cook. I hope you will try it

  • 1.0 Large Red pepper, chopped
  • 1.0 Large green pepper, chopped
  • 1.0bnch Ajices gustosos(sweet peppers) about 10
  • 1.0 large onion, chopped
  • 6.0 Or 7 garlic cloves, peeled
  • 2.0Tbsp Water IF NEEDED
  • Oregano(optional)
  • Olives(optional)
  • Roasted peppers(optional)
  • Oil(optional)
