Wash, seed and chop the peppers
This is Ajices gustosos(dulces), If you can not find these you can use mini sweet peppers. They usually come in a bag of different colors. Costco carries them.
Clean and remove the seeds
Chop your onions
Dump all the ingredients in a blender or food processor in portions not all at once. Add water if needed to help it along. I forgot to take a pic of the garlic😩 add that in as well. VIP 👌
After it has blended. I freeze mine in ice cube trays. You can also freeze in small containers. I prefer this option.

All frozen and ready to be bagged. I can now take what I need.
Freezing sofrito is convenient. It saves me alot of time in the kitchen. I always have some in the freezer at a moments notice when I have to cook. I hope you will try it

- 1.0bnch Recao
- 1.0 Large Red pepper, chopped
- 1.0 Large green pepper, chopped
- 1.0bnch Ajices gustosos(sweet peppers) about 10
- 1.0 large onion, chopped
- 6.0 Or 7 garlic cloves, peeled
- 2.0Tbsp Water IF NEEDED
- Roasted peppers(optional)
