Peel and soak eggplant.
Prepare eggplant on smoking racks.
Insert smoker box with soaked wood chips inside.
Place eggplant into the CT Express Combi oven to smoke.
Set to smoke at 120F (49C) 15 minutes.
Smoke will develop within the CT Express.
Prepare the breaking station by whisking eggs together in a bowl. Have flour ready in separate bowl.
Dip eggplant into the flour, then into the egg until fully covered.
Add oregano and basil to the panko crumbs, then coat the eggplant evenly.
Spread olive oil onto sheet pans.
Assemble the breaded eggplant onto the sheet pans.
Cook at 375F (190C) for 8 minutes.
Eggplant will be golden brown.
Spread tomato sauce in a pan.
Layer your eggplant, tomato and cheese evenly.
Top with tomato sauce.
Bake in combi mode at 325F (163C) for 20 minutes.
Top with cheese.
Bake for 5 more minutes at the same temperature to melt the cheese.
Serve with a fresh side salad.

- 2.0c Flour
