How to make simple cauliflower puree
a super easy and delicious cauliflower puree that is healthy but still has rich and creamy flavor

INGREDIENTS
Prepare 1 medium-sized cauliflower, cut into florets (approx. 2 2/3 cups)
Prepare 1 garlic clove. Mashed
Prepare a saucepan, add in 1/3 cups of vegetable or chicken broth. Set on medium heat
When the broth is about to boil, add in the mashed garlic and cauliflowers.
Add in 1/2 tsp of dried thyme, or 1 tsp of chopped fresh thyme
Cover with the lid and let it simmer for about 10 mnts or until the cauliflower is soft enough
Stir occasionally every 5 mnts, so all of the cauliflower will softened evenly.
When the cauliflower soft enough, turn off the heat and transfer into a blender. However, you can use food processor or potato grinder/crusher
Add in 1-1,5 tbsp of unsalted butter and 1 tbsp of cream cheese. You can omit cream cheese if you prefer any aged cheese or fetta. Add in 1/2 tsp of white pepper.
Blend all together in the blender. Taste test and keep on puree-ing until you satisfied with the texture. I dont really like my puree too smooth though .. feels like baby food :P
Transfer to a serving bowl or plate, garnish with chopped celery leaves or parsley. Enjoy :)

- 1.0Tbsp unsalted butter (I use 75% reduced fat)
- 1.0Tbsp cream cheese
- celery leaves or parsley for garnish
- 1/2tsp white pepper
