Squeeze lemon juice into the veggie mixture. Stir well.  Alternatively you can substitute lemon juice with balsamic vinegar for a stronger palette. I prefer a light version.

Serve with lightly toasted baguette and capers (optional). Note: Capers help to enhance the taste when it's placed onto the bread.
