Collect the ingredients and wash you hands.
Whip the cream......
.... into stiff peaks. Don't over do it.
Pour some sherry into a dish. Enough to half immerse a cookie.
Dip a cookie into the sherry, two seconds each side.
Make a ring of sherry soaked cookies.
Layer on some cream.
Smooth it out with a flat knife.
Repeat, adding a second layer.
Then a third layer.
Top off with more cream.
Smooth it off.
Add more cream to the outside.
Smooth off the inside of the ring, top and sides.
Sprinkle on the flakey chocolate. Clean the outside of the plate.
Leave in the fridge for at least six hours, preferably overnight. Enjoy sensibly.

- 30.0 Chocolate chip cookies
- 500.0ml Double cream
- 1.0 Chocolate flake
