INGREDIENTS
Lay out the bacon..
..and chop it into smaller pieces.
Chop the onion and the garlic.
Soften the onion and garlic in a teflon pan. Don't brown it!
In a bowl, mix breadcrumbs and cream.
When the onions are soft, put aside.
In a bowl, mix the meat with..
Eggs..
..bacon..
..onions and garlic..
..the breadcrumbs & cream AND salt & pepper.
Form patties..and then fill them with cheese.
In the original recipe the cheese used is Västerbotten cheese. I don't know if it's possible to get ahold of such cheese abroad. Try a a hard aged cheese if Västerbotten cheese isn't available.
Make a whole..
..stuff in the cheese...
Fold over the meat..
..and see to that the cheese isn't in immediate contact with the frying pan.
These patties are filled with cheese and ready to fry.
Like so. Give them some color and then place them in the oven. Cook in the oven for 10-15 minutes.
While the patties are browned or in the oven, make a sauce. Pour a little bit of water into the skillet. Sift the fluids into a pan and add heavy cream.
Heat it up and then add the remaining sauce ingredients. Add corn starch or similar to thicken it.
Here are the patties, taken from tve oven, ready to eat.
We enjoyed the moose patties with oven baked root veggies; turnip, carrots, celery root and parsnips.
- 800.0g Minced (moose) meat
- 200.0ml Heavy cream
- 2.0 Eggs
- 100.0ml Breadcrumbs
- 450.0g Bacon
- 1.0 Onion
- 1.0 Garlic clove
- Salt, pepper
- 150.0g Grated aged cheese
- The sauce:
- 250.0ml Heavy cream
- 100.0ml Red wine
- 50.0g Whey cheese
- 2.0Tbsp Cognac
- Salt, pepper
- 2.0Tbsp Game broth
- 1.0Tbsp Soy
- 2.0Tbsp Butter
- Potato flour or corn starch
