Add EVOO to medium heat pan. Cut up the sausage and brown. This uses Italian sausage, but you can lighten the recipe by using chicken sausage or ground turkey.
In another pan, add EVOO to medium heat. Add peppers, onions, & garlic.
Cook for about 5 minutes.
Cut zucchini in half and scoop out the insides. Save the inside to use later.
Add a cup of the zucchini to the pepper, onion, & garlic.
Add the sausage and mix to combine.
Spoon some pasta sauce into the baking sheet and spread all over.
Add the zucchini boats and fill each one with the mixture.
Top with sauce & the shredded cheese.
Bake at 375 for about 20 minutes.

- 3.0 Zucchini (boats)
- 1.0c Zucchini (scooped from inside)
- Tomato sauce
