Melt 2oz butter
Boil pint and a quarter of milk separately
Add and mix 2oz of flour, called roux. Always move it until bubbles.
Add milk in 3 equal stages, firstly mix in until smooth, second gentley mix hot milk, thirdly repeat second stage. - should feel lumpy which is fine
- 2.0oz Butter
- 2.0oz Plain flour
- 1/4pt Semi-skimmed milk
