In a large bowl, whisk together yeast, water, salt, and sugar.
Slowly incorporate 3 cups of flour into the bowl until fully combined. You may need to add more flour if the dough is still sticky.
Using your hands, knead the dough for a few minutes and form a ball, on a work surface.
Cut the dough into equal sized pieces.
Roll each piece into an even rope.
Take both ends of the rope and draw them together to make a circle.
Twist the ends then bring them towards yourself.
Press down the ends into a pretzel shape.
Beat the egg in a medium bowl.
Dip both sides of each pretzel in.
Arrange the pretzels on a baking tray covered with parchment paper. You may brush on some egg on parts that weren't completely dipped.
Sprinkle with sea salt flakes (the one in the photo has too much flakes..oops!) or whatever topping you desire, then bake for 10 minutes at 425F or 190c in a preheated oven.
Turn the oven to broil and bake for 5-10 more minutes until the pretzels get a nice golden color. (The pretzels in the picture weren't golden enough, they needed to be baked/broiled some more.)
Cool and serve. Remember, you can add whatever toppings you like and also add dips once the pretzels are baked.
