Preheat oven to 350°
These are the supplies I used. Just got the mini muffin pan.
Sauté onions in oil till clear.
Spray silicone mini-muffin cups. I used olive oil from a Misto.
Add pepper. Cook 1 minute.
Add garlic.
Add celery, cook a minute.
Stir 4 eggs in bowl, add salt, pepper, & chili powder.
Chop salmon.
Add salmon to eggs.
Add onion mix to bowl.
Stir, scoop from ice cream scoop into mini-muffin cups.
Ready for oven.
30 minutes.
Smells good, looks good.
Looks like a serving.
These are so good, we ate again.
