Beat egg and sugar.
I used the highest speed on my mixer until the texture was light and fluffy. You can also do it by hand. The mixture should get approximately twice bigger.
Add kefir. I used slowest speed.
Gently fold in flour. I used gluten free flour and only added 1 cup.
Add baking soda.
A little olive oil for frying. You really don't need much.
These will be the size if silver dollar pancakes. Just spoon them onto the frying pan.
Those bubbles mean they are ready to be flipped.
Viola! As you can see you get a bunch of them from one batch.

- 1.0tsp Baking soda
