How to make royal rice رز بالمكسرات
Basmati rice with nuts and dried fruits. with special spices. This is the most popular dish among my friends. They call it royal rice. Usually I cook it with olive oil. Some of my friends are vegans.

Basmati rice.wash until water is clear 8-10 times. Soak with boiling water
Soak all in boiling water 30 mins
Chop the onions. Diced

In a cooking pot, put 2 TBsp of clarified butter (سمنة) or 2TBsp of olive oil. Add the onions. Sweat. Then...
Add the spices
Strain the nuts mixture
Don't forget to dice the apricots
Add over the onions stir in.
Stir in and fry for 1-2 mins
Add 1/2 cup boiling water
Cover and cook on low fire. 30 mins
That is after 30 mins. Water is gone and the nuts are cooked
Strain the soaked rice and add in the pot
Stir and fry for 2-3 mins. Add 1 mug of boiling water. Cover. Cook on low fire. 20 mins.

For decoration 30 g grilled pine seeds, & grilled slivered almonds. More apricots
Some cut parsley or any green herbs of your choice. For the color
It is good for 4-6 people. all depends what other dishes are served along. Multiply proportions to make a big wonderful dish for buffet dinner. The smell of cardamon and miskeh is all over. Heavenly
- 250.0g Rice bastmati 1 mug
- 25.0g Raisins
- 50.0g Pine seeds
- 5.0 Apricots
- 50.0g Pistachios
- 50.0g Almonds
- 1.0g Onion small
- 1.0tsp 7 spices
- 1.0tsp Cinnamon
- 1/4tsp Miskeh peices (2 peices)
- 5.0 Cardamon pods
- 1.0tsp Salt
- 2.0Tbsp Olive oil or clarified butter
