Boil the potatoes; the salad can be served both warm, semi-warm and cold.
Put away some of the rocket to serve whole with the potatoes.
Use a blender to mix the rocket with the olive oil.
Like so. Add the parsley. I didn't find flat parsley so I used the regular kind.
Then add the lemon peel, as well as the juice.
Add the grated parmesan.
Stir. Now taste and then feel free to whatever amount of salt, pepper and sugar. Rocket may give it a somewhat bitter taste so if that happens you could also try to add more cheese.
Add the boiled potatoes.
Gently stir so that potatoes are covered in the pesto. Add the remaining rocket leaves.
We served the potatoes to grilled meat, grilled halloumi cheese, a wonderful feta sauce and a salad.

- 200.0g Rocket
- Flat parsley (a handfull)
- 3.0 Garlic cloves
- 100.0ml Olive oil
- 100.0ml Parmesan cheese
- 1.0 Lemon (juice & peel)
- Black pepper
