INGREDIENTS
Cut a skewer until slightly taller than jar. Assemble the clothes pins balancing on the jar holding the skewer.
Alternately you can use cotton thread longer than the jar and tape it to a pencil and balance on top if the jar!
Begin by assembling your ingredients
Wet your thread or wooden skewer and roll it in sugar. Set aside to dry while making sugar syrup.
Place the water in a medium sized saucepan over medium heat and bring to a boil.
Begin adding the sugar, one cup at a time, stirring well. It takes longer for sugar to dissolve after each addition.
Continue to stir and boil until all sugar has been added. Once syrup is liquid and smooth remove from heat.
Add colouring or flavouring. Add two to three drops of coloring.
Allow the syrup to cool down ten mins. Place a funnel over the jar.
Carefully pour syrup in jar.
Lower skewer into jar an inch from top. Don't let it touch bottom or it will harden on sides. Place in a cool place.
Sugar crystals will start forming within 4-6 hours. If you see no change after 24 hrs, re boil syrup and dissolve another cup sugar in it.
Allow the rock candy to grow until it is the size you want. This process will take up to a week, depending on how large you want your rock candy. Not to big or it will hit the sides. Voila!!
