INGREDIENTS
Chop up your rhubarb until you have 4 cups of chopped rhubarb. I used about 4 stalks.
In a saucepan, Mix 3/4 cup of sugar, and cornstarch. Stir in the rhubarb and water.
Bring to a boil. Cook for 1 minute.
Transfer to a greased 9 inch square baking dish
Dot with butter and sprinkle with cinnamon.
In a medium bowl, sift together the flour, 1 tablespoon of sugar, baking powder, and salt.
Cut in the butter until it looks like coarse crumbs
In a smaller bowl, mix the milk and the Greek yogurt/egg. I used Greek yogurt because we were all out of eggs and it turned out great :)
Add it all at once to the dry ingredients. It should look like dough. Add more milk if it is a little thick.
Drop by spoonfuls on top of the rhubarb mixture. Sprinkle with the 2 tablespoons of sugar. Bake at 400 degrees Fahrenheit for 20 minutes or until lightly browned on top. Makes 9 servings.

- 1/4c Greek Yogurt or 1 egg
- 2.0Tbsp White sugar
