Start from the cabbage
Cut it in 3 pieces and discard the hard heart
Cut it into pieces and put it in the top of a tier steamer
Peel the potatoes and cut them in halves and place them in the bottom tier, steam both potatoes and cabbage until tender, about 30min. Let cool down.
Squeeze as much water out of the cooked cabbage as you can and blend to a smooth paste
Do the same with the potatoes
Spread the flour on a board
Add potatoes and cabbage
Start mixing the dough with your hands, add as much flour as you need if sticky
Form a ball and set aside for 10min
Cut portions of the dough and roll the with your hands to strings 1-2cm in diameter cut them to 1-2cm ling pieces. The size is totally up to you, but try to make them even
Use two forks to shape them
Set aside on a tray coated with wax paper and sprinkle with some flour so that they don't stick. You can cook them right away (boil for 2-3min in salted water) or freeze and use another time.
This is how they will look once cooked, the nice purple color stands out and will give color to your dish! Use a light sauce with these, so that you can still appreciate the cabbage taste! Enjoy!
