Cook couscous according to the package directions. Spread on a plate and let cool. Meanwhile, heat 1 tbsp. of the oil in a skillet over medium heat. Season chicken with 1/4 tsp. salt and pepper.
Cook chicken until cooked through, 6-8 minutes per side. Transfer couscous to bowl and gently toss with cucumbers, cherries, parsley, vinegar, 2 tbsp. of remaining oil, and 1/4 tsp. salt and pepper.
In another bowl, whisk together the marmalade, orange juice, crushed red pepper, the remaining tbsp. oil, and 1/4 tsp. salt. Serve the chicken with the couscous salad and drizzle with marmalade sauce.
