lay out your ingredients! wash and start cutting away! I used a garlic masher on the garlic to really get the flavor. The zucchini was quartered, the eggplant cubed, and pepper and onion diced small
bell pepper before(on board) and after (in bowl). also the eggplant that was being prepped.
I used a garlic masher as I said before... it was so strong! I love garlic, so I rec to anyone who loves garlic!
peel up dem garlics!
pour olive oil in a pan at medium heat (use a big pan, trust me)
add onion and red bell pepper! cook until tender
we pureed the tomatoes. put that in with herbs and garlic!
put in dat zucchini and eggplant!
stir it all in and cook for 10 min, stirring occasionally. salt and pepper to taste!
