Make Raspberry Granola Bars (Gluten Free)

INGREDIENTS
In a food processor, add: •1 1/2 cups gf flour. (I use Pamela's brand, it bakes perfectly) •1 cup dark brown sugar •1 1/4 c gf oats Pulse this just to incorporate
Next add: 3/4 tsp baking powder and 1 tsp cinnamon and a tsp of vanilla
Cut up a stick and a half (3/4 cup) cold butter and add. Pulse until it is crumbly and firmly combined
Using ONLY half of flour mixture, Press into a parchment paper lined 9x13 dish. Using the parchment makes it easier to remove once baked. Now for the jelly; I used the whole jar of raspberry preserves
Spread it all over the crumb mixture
Now sprinkle and pat the rest of crumble on top of the preserves
Bake at 350° for about 40 minutes or until golden brown
Allow to cool a bit before you remove and slice so that it doesn't fall apart
Slice into bars
Once cooled, you can wrap individually and freeze OR wrap and save for later. These are definitely a back to school made easy! Great for soccer practices, lunch box and of course, a quick breakfast
