How to make rare roast beef

For those people, like me, who hate over cooked roast beef. Enjoy!

Start by searing your joint of beef in a hot pan. This means cooking for a few seconds on each side so it goes broken and seals in the juices. Pre-heat your oven to the top temperature

To the top add a mixture of grain mustard, chopped rosemary, crushed garlic and seasoning

Add two wine glasses worth of water. Put it in the oven and immediately turn the temperature down to 180C. Roast it for 15 mins for every 450g of beef plus 20 mins. This joint was 900g so 50 mins

I served it with sautéed potatoes, mixed veg, gravy and horseradish sauce. I made the gravy using the juices from the pan thickened with a little corn flour
