This was leftover quinoa I had. Simple recipe I will upload it at a later time. (Corn, green onion, cilantro and lemon)
Mix all ingredients together. Don't forget the most important ingredient !!!! LOVE.
Get dirty! Let everything sit for a few minutes to absorb the liquid. You want the batter to be moist, but not runny ( add breadcrumbs if runny). Form patties and get you pan ready for cooking.
Heat olive oil in a large skillet over medium-low heat. Place patties on skillet (if they look as they are about to fall apart, they won't). Cover pan & let them cook for 7-10 min. Flip & cook 7-10min
Tadaaaa!!! You can make a dip or chop some avocado and place on top but I was toooooo hungry to even bother. **Not only are they healthy but delicious too. **

- 4.0 Eggs
- 1/3c Parmesan cheese
- 3.0 Green onions, sliced
- 3.0 Garlic cloves, minced
- 1/2tsp Sea salt
- 1.0c Panko breadcrumbs
- 1.0Tbsp Olive oil
