Ingredients
Remove both ends of onion
Remove peel
Slice onion in half
Half halves long ways (that's a mouthful!)
Slice quarters into square pieces (size of onion is up to preference; bigger is better if you like flavor but want to be able to avoid consuming whole pieces, and vice versa)
Place in salad bowl to await beans while you rinse them
Pour clean beans on top of chopped onion
Dress with parsley
Salt
And olive oil (you could also add tuna at this point)
Mix together and chill gently in fridge before serving
Done! Very simple and light; much of my recipes are simple (salt and olive oil) and are Italian staples you find on the table often - maybe that's why Italians are so healthy! Delicious either way!
