Ingredients --

Put water on so that it will be at a rolling boil by the time we're ready for it

Once water warms up enough, dissolve vegetable cube in water (you could rather salt the water if preferred, but I find using cubes gives more flavor to boiled foods)

Rinse green beans in a colander

Use the "smashing" technique for your garlic as I discussed in my recipe for "Sugo fresco"; this is especially important in this recipe as we will not be cooking the garlic

Skin will remove easily

Once water is at a rolling boil, pour in rinsed green beans

Reduce to a simmer and cook until they are the texture you prefer. Cooking to me is very personal; you must taste often and you will also smell when a dish is ready!

Strain green beans and place in serving bowl

Mix in cloves of garlic

Dress with lemon juice

Olive oil (Don't be stingy! The dressing that remains is sooo good you'll want to sop it up with crusty bread!)

And salt to taste

Mix it all together - we have not sautéed the garlic, but the heat of the green beans will "cook" it enough to absorb the garlic flavor (you may want to cover with foil to "steam" dish together)

You will not believe what a treat this healthy dish is! Serve warm or prepare in advance and chill in refrigerator before consumption for use as a salad option
