Mix all ingredients in a bowl, and lightly blend the mixture in a food processor. Don't blend it too much, you want to be able to form patties with the mixture.
Form the mixture into balls and flatten into patties.
Heat canola oil to 350 degrees Fahrenheit, and carefully place the falafel patties in the oil. Cooked evenly on both sides, and place the patties on paper towels to drain extra oil.
Serve on toasted buns spread with hummus and non-fat Greek Yogurt. This dish is served well with pita chips and hummus.
