Take out all your ingredients for prepping
Put up a pot with water and a little salt to boil for the pasta... When the water is boiling add the pasta and a little oil to keep it from sticking together..
Meanwhile blend the pumpkin with 1/4 cup of milk
Blend.
The consistency will not be totally smooth nor do you want it to be
Check on your pasta .. Don't over cook it... About 10 mins is good for al dente pasta
Mince the two cloves of garlic and set aside
Grate the cheese and set aside
Strain your pasta in a colander.. Do not rinse
All cheese is grated and set aside
Defrost your frozen spinach by putting a little water with the frozen spinach out of the packet and microwave for about 5 mins on high... Squeeze out excess water and set aside
In a saucepan heat the butter. At the same time preheat your oven to 400 degrees
Nice and hot ... When it's heated add the garlic
Add the garlic
Let the garlic sauté in the butter for about a minute
Add the flour and whisk it around cooking it for about a min or two to get rid of the flour taste... This is called a roux...
Add the rest of the milk and keep whisking... Allowing it to thicken
Keep whisking and thickening for a min
Keep cooking and mixing it evenly for a further minute
Add the pumpkin purée and continue whisking and blending
See how it looks? A nice orange yellow
Keep whisking and let it thicken for another minute
Watch it thicken
Remove from heat and add the cheese mixture
Whisk and set aside
In a casserole dish add pasta and spinach
Add cheese mixture and mix
Mix it in well
Add the rest of the cheese mixture and add cheese to top
Admire work lol
Put the timer on the oven to 30 mins
Put in the oven
Take out after 30 mins and let cool
Consume with whatever you would like... A side with meat, fish or like I do... Alone... With some wine lol . Enjoy... What I have found is that Kraft thick and spicy honey BBQ sauce on top -mmmm

- 2.0c Cheddar cheese
- 1.0c Goat cheese
