Cut 3 lemons in quarters, coat liberally in salt and place into a jar. Continue until lemons are all in jar and squish down firmly.

Add another lemons worth of juice and put on the lid. Give it a good shake.

Leave in jar for 4 weeks shaking every few days or so. Use in salads, dressings, tagines and moroccan casseroles.
