use good, freshly roasted, whole bean coffee. Blue Bottle and Ritual are two of our favs

Temp is also important. A tea kettle that can reach 200 degree F is a big help. Ours has a hold feature.

#2 paper cone filter

fold the seams to fit

everything in place

just water first. to rinse out any lingering filter taste.

scale to measure coffee by weight 15 grams is about right for a single 8 oz cup

fine grind

pour just enough water to over grounds. let it expand and offgas.

watch it drip. gravity is nice.
