How to make pork carnitas tacos
A few days of prep, but worth it to share with dear friends. Make sure they bring healthy appetites!

INGREDIENTS
Assemble your garlic and spices.
Crush all the garlic! Don't be afraid :)
Add spices, then mush it all together. I added bay leaves - le your nose guide you.
Rub it in.
Cover and let sit overnight.
Sleep!
Take the meat out and let it warm up a little. Roughly chop onions and fry on medium high.
Make sure they brown as much as you can without burning. Remove and set aside.
Squeeze oranges and limes.
Sear the meat on all sides. Careful not to burn, you'll need the remnants on the pan.
Add juices to the pan and deglaze.
Reduce a little.
Add Knorr Homestyle stock.
Add tomato paste.
Layer onions on bottom of slow cooker. Add the pork and the sauce on top.
Set it on low for the day..10 hours or so should do. Until the meat can easily fall apart.
Like this. Let it cool until you can handle it. I put it in the fridge for the night, then skimmed off the congealed fat (to pretend I'm being healthy). Then use two forks to shred it.
Strain the reserved sauce and reduce to thicken. Pick out the fatty parts...feed Them to your grateful dog. Add the meat back to the slow cooker with the sauce and heat until your amigos arrive!
Make homemade salsa with cilantro.
More cilantro. Guacamole. Cheese. Warmed corn tortillas.
Carnitas.
Picked onions with beets. Yep, homemade.
Stop BEFORE you think you are full. Or you'll be crying in pain later.
See...as Cindy commented...THIS is what you SHOULD NOT EAT after all those tacos. Too much rich food.
- Pork shoulder, bone-in
- 1.0 Bulb of garlic
- 3/4c Each Fresh lime juice and orange juices
- 2.0Tbsp Ground Ancho chile peppers
- 2.0tsp Cumin
- 1.0tsp Poultry seasoning
- 1.0 Pepper
- 1.0Tbsp Salt
- 2/3 Can Tomato paste
- 2.0Tbsp Brown sugar
- 2.0 Onions
- 1.0 Knorr Homestyle chicken stock
