I've decided to bake my plums, because then I don't have to add water,I don't risk burning it in the pot and the plums will stay whole instead of boiling into a mash. You can omit the star anise.

Use a baking tray where you can have the plums in 1 1/2 layer. Stir in the sugar and add the spices. You can use cinnamon, liquorice root or fresh ginger. Turn oven on at 300\u00b0F/150\u00b0C

Bake the plums for 30-45 minutes. Stir once or twice. This is after 10 minutes. I'm using a hot air oven.

I sterilised my jars by boiling them for 10 minutes. The jam is going back in the 300\u00b0F hot oven until it starts bubbling in one of the jars. Then turn the oven off and leave them for 30 minutes more
