1. Use green plantains & try to find the straightest ones. 2. Slice off the ends & then slice down the middle lengthwise. 3. Cut in half. 4. Peel carefully.
Next spiralize! Then to make the "rice" place the spiralized noodles in a food processor & pulse until it makes rice like bits.
Sauté garlic & red pepper flakes in olive oil in medium heat pan for 30 seconds.
Add onions & cook for about 2 minutes.
Add in the plantain rice. Season with adobo, chili powder, cumin, salt, & pepper. Cook for about 2 minutes.
Add in the chicken broth & let it reduce.
Add the diced tomatoes & black beans. Cook for another 2-3 minutes.
Cook until you like the consistency of the "rice" & beans.
