Dice some pineapple - fresh or canned.
Add some diced pepper. I use red for the color.
Add some snipped cilantro leaves.
Add some onion. I use purple, one inch slices. Purple for the color and short slices to add another texture.
If you have it, grind some fresh white pepper. It's milder tasting and blends with the other colors in the salad. Add hot peppers if you wish.
Gently add all ingredients together.
