INGREDIENTS

All southerners have good bread pudding recipe's..i love my moms pineapple version. Start w 4 cups croissants. Cubed. You can use any bread but believe me.. Croissants make the best tasting

Softened, 3/4 cup butter

Add a 1 1/4 cup sugar

Beat that together then add 3 eggs. Beat this until its fluffy and smooth

Next add a large, drained can of crushed pineapple and a 1 tsp vanilla. I am not a fan of canned fruit but using fresh pineapple does cause this to get watery. I find that the canned works best.

Half a lemon, juiced

Pour your mixture over the bread and stir gently

Press into a greased 9x13 dish

Bake at 350° for about 45 minutes

Now usually bread pudding has a wonderful rum sauce or caramel sauce. However i love it as a side dish. Pairs perfectly w ham or roasted chicken

Serve it warm with ice cream or with you dinner. Enjoy!
