INGREDIENTS
These are all the ingredients that you will need to make the cookies! I can't add a supplies list because it crashes on my phone every time I try...
For colour and flavour, don't forgot the gel food colouring, almond, and vanilla extract!
Dry ingreds: 5 cups all purp. flour, 1 cup icing sugar, 1 cup sugar, 1 tsp salt, 1 tsp baking soda Wet: 1 cup oil, 2 eggs, 1 tbsp lemon juice, 2 tbsp vanilla, 1 tbsp almond extract, 1 cup butter
Mix softened butter with 1 cup icing sugar and 1 cup regular sugar
Cream it all together
Add in two eggs
Gradually add 1 cup of oil
Add 2 tablespoons of vanilla extract
Add 1 tablespoon of almond extract
Add 1 tablespoon of lemon juice
While wet ingredients are mixing, combine dry ingredients. Add salt and baking soda to flour
Added!
Mix thoroughly to combine
Gradually add dry mixture to wet mixture and combine
Until you have cookie dough!
Divid into six separate balls of dough
Colour each ball, but remember to wash your hands in between colours to prevent cross-contamination!
End result - choose your colours!
Pack each ball into a rectangular container lined with plastic wrap that you will slice your cookies out of. We only had a milk jug that we cut into this shape...be resourceful! :)
You will have a 6 layered loaf of rainbow cookie dough!
After FREEZING the dough for about an hour to solidify it into a loaf, cut out your cookies. Remember, each Pinata Cookie needs one thick slice (for the middle) and two thinner slices for sides!
Here is a tray of thin slices (the sides of the cookies). Bake in preheated oven at 350 degrees F
After 10-12 minutes, the cookies will be baked and have risen but are still soft - don't worry, they are DONE. While they are still hot and soft, use your cookie cutter to cut out your cookies
Once you've cut them, let them dry and harden. We had a LOT of extra cookie cut out from these...
Cut out holes in the THICKER slices so that you can fill them with candy after
While everything is cooling, make some simple icing (milk and icing sugar) and dip your extra cookies like dunkaroos! :)
Using that icing that you made, pipe onto thin cookie slices after they have cooled and hardened into real sugar cookies.
Place 'hollowed' thick slice on top and press down
Fill the hole with candy!!
Get ready to glue the other side on, and...
...seal to form!! Leave for about 15-30 minutes for it all to stick together.
And you have piñata cookies!!!
