Pine nuts, basil, parmesan cheese, garlic, olive oil and salt are all you need to make a fresh and authentic pesto sauce!

Start by toasting your pine nuts over medium-high heat until golden and fragrant. Shake frequently to avoid burning!

Toasting the pine nuts "wakes up" the oils and intensifies their flavor.

Put all ingredients EXCEPT olive oil in a blender or food processor. Pulse to desired consistency while drizzling in the oil.

To store, refrigerate in an airtight container with a few tablespoons of olive oil on top. The pesto will keep for about two weeks.

Toss with pasta, use as a marinade or sandwich spread, stir into soups for added flavor and depth- the possibilities are endless! Buon appetito!
