INGREDIENTS
Soak potatoes overnight
Prepare pork by removing fat
Cut meat into pieces about this big
Add a tablespoon of salt to season
Add 2 tablespoons of vegetable oil Let it cook for
Chop one onion
Smash 2 cloves of garlic into a paste
Measure 1 1/2 cups of spanish peanuts
Roast them until they are brown, you will be able to smell them
The meat should look like this when it is done
Put onions and garlic in the meat juices
Add half of a teaspoon of salt and a half a tablespoon of cumin and pepper
Add 3 tablespoons of aji panca
After the spices it should look like this
Add the pork
Add the dried potatoes and 4 cups and water
The peanuts should turn brown when they are done
Cook meat on low for 45 minutes, stir every couple minutes, you also may have to add water
Take skin off the peanuts when they have cooled
Smash peanuts
Add peanuts cook for five minutes
Use it as a side for other peruvian cuisine
