Temper the steak to room temperature to help it cook even
Tap dry with paper towels on both sides
Season with two pinches of kosher salt
Season with two pinches of pepper
Repeat on the other side
Drizzle with olive oil
Rub the salt and pepper with the olive oil.
repeat on other side
Set stove on medium high
Feel the pan and wait for its hottest point.
Add the steak and wait 1 minute to turn. See your watch.
Third flip. Look at the nice color!
Fourth flip and rotate to make sure it cooks evenly.
Fifth flip, look at the nice crust it now has. For medium rare stop after this.
Sixth flip (for medium) and rest for 2.5 minutes then flip and rest for another 2.5 minutes.
