You can peel the potato or keep on the skin. Either way, first step is the wash the surface.
Heat your vegetable oil.
Next we cut the potato into the desired lengths...
Slice and . . .
. . .slice. I like them long but any shape or size will work.
Ta da! Ready to go!
Here's one of the added steps that's going to make all the difference. Rinse your potatoes in cold water. Keep changing the water until it is clear and no longer cloudy.
See, it's getting clearer and clearer.
Next drain off the water.
Pat dry on a paper towel.
Both sides of the potatoes so they are not very wet.
Then put them into the hot oil.
When they start to look cooked, not golden yet, but no longer "raw" looking, we're going to remove the potatoes from the oil.
See, just starting to look golden...drain again on a paper towel while we let the temperature of the oil come back up. This is that 2nd extra step that's going to give you the tastiest fries ever!
Put the potatoes back into the hot oil and cook until golden brown. This will happen quickly so keep a close eye on them.
Remove from the oil and drain once more.
. . .and serve! These are going to be the best fried potatoes ever! Enjoy!
