How to make peanut butter coconut granola
Add any additional mix ins. I usually look what I have in the cupboard at the time

INGREDIENTS
Preheat oven to 350 degrees and spray cookie sheet with non stick spray. Get all your ingredients ready (see ingredient list)
Add peanut butter, apple sauce, honey, and almond milk to a saucepan
Cook ingredients until just melted
Remove from heat and add cinnamon to peanut butter mixture
Add flaked coconut to the mixture. Shredded coconut would work as well but I prefer the bigger flakes. You can use sweetened or unsweetened. I don't like it really sweet so I use unsweetened
Add any trail mix of your choice. You can add more or less depending on your preference
Finally add the oats and flax seed if using
Mix until combined. Mixture will be wet and clumpy. Add more oats if you prefer a drier granola
Spread a single layer on the prepared baking sheet. Bake for approximately 15 minutes stirring every 5 minutes to ensure it does not burn
When granola is a golden brown color remove from oven. Be careful it can burn quickly
Store in mason jars because it helps the granola stay fresh and also looks cute!
- 1.0c Rolled oats
- 2.0Tbsp Peanut butter
- 2.0Tbsp Honey
- 2.0Tbsp Apple sauce
- 1.0Tbsp Almond milk
- 1.0tsp Cinnamon
- 1/2c Flaked coconut
- 1/2c Trail mix
- 1.0Tbsp Ground flax seed (optional)
