Add the chopped peaches, lemon zest, sugar and water to pan.
Heat on low to medium, do not boil.
Peaches will become soft.
Mash with a potato masher.
Add the sprigs of mint and simmer on low till syrup thickens. Then remove from heat and leave to cool.
When cooled place in a blender and whizz away. Strain through a sieve.
Add the lemon juice, and mix well.
Pour into pitcher.
Top up with sparkling flavoured water.
Pour into glasses.
Serve with ice and garnish with mint.
- 6 peaches
- 1 cup of sugar
- 1 cup of fresh lemon juice
- Zest of 2 lemons
- 3 cups of water
- Sprig of mint
